Ingredients

  • 2 cups all-purpose flour
  • ½ tsp salt
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 tsp cinnamon
  • 2 large eggs beaten
  • ¾ cup granulated sugar
  • 1 tsp vanilla
  • ¼ cup plain or vanilla yogurt
  • 6 tbsp unsalted butter melted and cooled slightly
  • 1 1/2 cups overripe bananas mashed with fork (approximately 3 -4 bananas)
  • 8 oz dark or semisweet chocolate chips divided

Instructions

  • Preheat oven to 350º F.
  • Prepare a 9"x5" loaf pan by spraying with nonstick cooking spray.
  • In a small bowl, add flour, salt, baking soda, baking powder and cinnamon and whisk to combine. Set aside.
  • In a large bowl, add the sugar and eggs and whisk for 1 minutes until thoroughly combined.
  • Add the yogurt, vanilla, melted butter and mashed bananas and whisk until combined.
  • Add the dry ingredients into the wet ingredients and mix until no flour pockets remain. Do not over-mix.
  • Fold in 6 oz of chocolate chips.
  • Pour and spread the batter into the prepared baking pan. Sprinkle the remaining 2 oz of chocolate chips over top of the batter.
  • Bake for 60 minutes, until a toothpick inserted into the center of the bread comes out clean.
  • Remove bread from the oven and allow it to cool in the pan for 10 minutes. Remove from the pan and set on a wire rack until completely cooled.
  • Slice and serve.
